WINEMAKING

Shiraz from 35-year-old vines planted on iconic terra ossa soils over limestone bedrock produce concentrated, small berries. Sustainable farming practices with cover crops and integrated pest management.

Selectively harvested in the cool of early morning hours at optimal phenolic ripeness (14° Baume).
The fruit is gently destemmed and berry sorted. 7-day cold soak at 8°C, slowly fermented for 14 days in small open-top fermenters. Peak fermentation temperatures are held at 18°C with gentle pump overs with air twice daily.  

28-day total skin contact, including post-fermentation maceration to optimise tannin integration and develop signature terra rossa earthiness. Gentle pressing at 0.8 bar maximum pressure.

12 months in French oak barrels (33% new). Malolactic fermentation is completed in the barrel during the autumn months. 

TASTING NOTE

Deep garnet-purple with a vibrant crimson rim that catches the light beautifully.

Intense aromas of ripe blackberry and dark cherry leap from the glass, complemented by notes of crushed violet, cracked black pepper, and hints of dark chocolate. Subtle layers of eucalyptus and star anise emerge with time, showcasing the distinctive McLaren Vale terroir.

Full-bodied and generous, with luscious flavours of black plum, mulberry, and blueberry preserve coating the palate. The rich fruit is balanced by savoury notes of cured meat, Mediterranean herbs, and mocha. The distinctive terra rossa soils contribute a mineral backbone that provides structure and complexity.

Long and persistent, with fine-grained tannins that provide excellent texture while remaining approachable in youth. Dark chocolate and spice notes linger alongside a pleasant warmth that speaks to the South Australian sunshine.

While drinking beautifully now, this wine will continue to develop additional complexity over the next 8-10 years.
