Deep garnet-purple with a magenta rim. The nose offers generous dark chocolate, mocha, coffee bean and sweet spice with dark berry undertones. On the palate this is opulent and old-school, showing dense dark fruit, mocha and savoury complexity with firm yet velvety tannins. It carries serious weight and excellent length with a rich, commanding finish. Rich, powerful and classically styled.

A cornucopia of red and blue fruits, doused with liquorice root, is framed by a good lick of classy cedar-bourbon oak, melding effortlessly with a spout of freshness. A lilt of violet and kirsch is ladled across a lengthy finish, portending of what’s to come for those with patience. Very classy

WINEMAKING

60-year-old Shiraz vines, planted on sandy soil. 

Selectively picked in early morning hours at 14° Baume to preserve natural acidity and aromatic compounds. The fruit is gently destemmed and berry sorted. 7-day cold soak at 8°C, slowly fermented for 14 days in small open-top fermenters. Peak fermentation temperatures are held at 18°C with gentle pump overs with air twice daily. 

Aging 36 months in French oak barrels (80% new, 20% neutral). Malolactic fermentation is completed naturally in the barrel.

TASTING NOTE

The Pasha McLaren Vale Shiraz pays homage to the ways of the past. The way we used to do things, "OLD SCHOOL", the Glory Days! When times were simpler.

Bursting with ripe red berries, Aromas of coconut & hints of vanilla. Full-bodied palate structure with a complex mix of flavours, ripe red berries, coconut, chocolate & spice. Great middle palate sweetness with well-integrated oak characters. Long & almost chewy tannins with a well-balanced finish.​
