WINEMAKING

Crafted from 60-year-old vines, this exceptional McLaren Vale Cabernet Sauvignon embodies generations of Australian winemaking heritage. Each cluster of fruit is carefully hand picked and cold-soaked for seven days, allowing the gentle extraction of deep colour and complex flavours.

The wine undergoes a natural fermentation process with wild yeasts for 21 days, preserving the authentic character of the vineyard. Following a gentle pressing, it matures for 36 months in a thoughtfully selected combination of new French and American oak barrels, developing remarkable depth and sophisticated oak integration.

This meticulous approach yields a wine of outstanding concentration and complexity, showcasing the distinctive terroir of McLaren Vale and profound depth.

TASTING NOTE

The 2021 Claudius Cabernet opens with lifted aromas of blackcurrant, ripe blackberry and dark cherry, layered with hints of cedar, tobacco leaf and warm spice. On the palate, it is bold yet refined, showcasing McLaren Vale’s signature richness with plush dark fruits, fine-grained tannins, and a beautifully integrated line of French oak.

Mid-palate density leads into a long, graceful finish, revealing subtle notes of cocoa, bay leaf and graphite. A structured and elegantly balanced Cabernet, drinking superbly now but built to age gracefully over the next couple of decades.
