WINEMAKING

100% South Australian Pinot Noir vines averaging 18 years old, managed specifically for sparkling wine production with early harvest timing and reduced yields.

Selectively harvested at 12° Baume to retain crisp acidity (8 g/L) and delicate aromatics. Whole berries are transported immediately to the winery in small picking bins.

Gently pressed and chilled to cold settle the juice. Fermentation in temperature-controlled stainless steel tanks for 12 days, preserving primary fruit character and maintaining a low pH of 3.15.

The Base wine aged on fine lees for 2 months with weekly bâtonnage. 

Peak drinking window is within 5 years of purchase.

Their sweetness is beautifully balanced by a refreshing acidity, reminiscent of ripe cranberries and a hint of orange peel. The finish is long and graceful, leaving a delicate memory of red berries and a touch of minerality.
